Salmon is one of my favorite foods. Not only is it delicious, but it is loaded with omega-3 fatty acids, protein, vitamins and minerals. Here’s a delicious recipe for Baked Wild Salmon with Organic Veggies, cooked in butter, ghee, or tallow for a rich and nutritious meal. As always, ONLY use organic ingredients.
Ingredients
For the Salmon:
- 4 wild salmon fillets (6-8 oz each)- (here is our link to Lummi Island Seafood)
- 4 tbsp unsalted butter, ghee, or tallow
- 2 garlic cloves, minced
- Juice of 1 lemon
- 1 tsp fresh dill, chopped (or ½ tsp dried dill)
- 1 tsp sea salt
- ½ tsp black pepper
For the Organic Veggies:
- 2 cups organic broccoli florets
- 2 cups organic carrots, sliced diagonally
- 1 red onion, cut into wedges
- 1 zucchini, sliced into rounds
- 3 tbsp butter, ghee, or tallow
- 1 tsp Italian seasoning
- Sea salt and black pepper to taste
Instructions
Step 1: Prepare the Salmon
- Preheat your oven to 375°F (190°C).
- Rinse the salmon fillets under cold water and pat dry with paper towels.
- Melt the butter, ghee, or tallow in a small saucepan over low heat. Add minced garlic and cook until fragrant (about 1 minute).
- Mix in lemon juice, dill, salt, and pepper.
- Place the salmon fillets in a baking dish, skin-side down. Brush the garlic butter mixture generously over the salmon.
Step 2: Prepare the Veggies
- In a large mixing bowl, toss the broccoli, carrots, red onion, and zucchini with the butter, ghee, or tallow.
- Sprinkle with Italian seasoning, salt, and pepper, ensuring the vegetables are evenly coated.
- Arrange the vegetables around the salmon fillets in the baking dish or on a separate baking sheet lined with parchment paper.
Step 3: Bake the Dish
- Cover the baking dish with foil to keep the salmon moist, and bake for 15-20 minutes.
- Remove the foil, increase the oven temperature to 425°F (220°C), and bake for an additional 5-7 minutes until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized.
- (Optional) Broil on high for 2-3 minutes for a golden finish on the salmon and veggies.
Step 4: Serve
- Plate the salmon fillets and divide the roasted vegetables among plates.
- Drizzle any remaining garlic butter sauce from the baking dish over the salmon and veggies.
- Garnish with additional fresh dill or a squeeze of lemon, if desired.
Tips
- Ensure all veggies are cut into similar-sized pieces for even cooking.
- For extra flavor, marinate the salmon in the garlic butter mixture for 20-30 minutes before baking.
- Serve with a side of organic quinoa, cauliflower rice, or a fresh green salad for a complete meal.
Enjoy your heart-healthy, nutrient-packed dish!
