Savory, protein-packed, and perfect for a nourishing start to your day.
Organic Ingredients (makes ~8 small patties)
- 1 lb ground bison (beef, lamb or ground chicken)
- 1 tsp sea salt (Redmond Real Salt recommended)
- 1 tsp dried sage
- 1 tsp fennel seeds (lightly crushed)
- 2 cloves garlic, minced (or 1 tsp garlic powder)
- ¼–½ tsp red pepper flakes (optional, for heat)
- 1 tbsp ghee or tallow, for cooking
Instructions
- Mix the meat:
In a large bowl, combine ground bison with salt, sage, crushed fennel, garlic, and red pepper flakes (if using). Mix gently until just combined—avoid over-mixing to keep the patties tender. - Form patties:
Divide mixture into 8 equal portions and form into small, flat patties about ½-inch thick. - Cook:
Heat ghee or tallow in a cast iron skillet over medium heat. Once hot, add the patties in batches and cook for about 3–4 minutes per side, or until browned. - Serve:
Enjoy warm with eggs, avocado, sautéed greens, or your favorite ancestral breakfast sides.
🔁 Optional Additions
- 1 tsp dried thyme or rosemary for variety
- ½ grated apple or 1 tsp maple syrup for a subtle sweetness
- 1 egg mixed into the meat if you want a more tender, juicy patty
