We all deserve a treat sometimes! The treat is even better when it contains healthy fats antioxidants and is missing the harmful sugar and instead is sweetened with monk fruit. This is a great recipe for the young and the old. If you have children, you will want to hide it in the back of the refrigerator, so you keep some for yourself! However, if they do get into this creamy pudding at least you know it’s real food! Indulge and enjoy!
- ½ c. coconut cream
- ½ c. decaf or regular coffee
- 3 tbsp. collagen
- 1 tbsp. organic cocoa
Combine all ingredients in a blender and blend until smooth. Refrigerate until firm, about 3-4 hours.
Optional:
Stir in 2 tsp chia seeds prior to refrigeration
Top with cocoa nibs
