- 2 large organic eggs, beaten
- 1 cup organic shrimp, peeled and deveined
- 3 tablespoons organic coconut aminos
- 2 tablespoons organic avocado oil or organic coconut oil
- 1/2 cup organic onions, finely chopped
- 1/2 cup organic carrots, diced
- 1/2 cup organic green peas (fresh or frozen)
- 2 cloves organic garlic, minced
- 1 teaspoon organic ginger, grated
- 2 tablespoons organic green onions, sliced (for garnish)
- Sea salt and freshly ground black pepper, to taste
Instructions:
- Prepare the Cauliflower Rice: If using a whole cauliflower, wash and chop it into florets. Pulse in a food processor until it resembles rice. Set aside.
- Cook the Shrimp: Heat 1 tablespoon of avocado or coconut oil in a large skillet or wok over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
- Scramble the Eggs: In the same pan, pour the beaten eggs and scramble them until just set. Remove and set aside.
- Cook the Vegetables: Add the remaining tablespoon of oil to the pan. Sauté onions, carrots, and peas for 3-5 minutes, until softened. Stir in the garlic and ginger, cooking for another minute.
- Stir-Fry the Cauliflower Rice: Add the riced cauliflower to the pan and stir-fry for 5-7 minutes, until tender but not mushy.
- Combine Ingredients: Return the cooked shrimp and scrambled eggs to the pan. Stir in the coconut aminos, mixing everything thoroughly. Cook for another 2 minutes to heat through.
- Season and Garnish: Add sea salt and black pepper to taste. Garnish with green onions.
- Serve: Plate the cauliflower fried rice and enjoy immediately.
