Organic Ingredients (makes ~9 brownies):
- 1 cup almond flour (finely ground)
- ½ cup unsweetened cocoa powder
- ½ cup raw honey (or maple syrup for variation)
- 2 large pasture-raised eggs
- ¼ cup melted coconut oil (or grass-fed butter)
- 1 tsp vanilla extract
- ¼ tsp sea salt
- Optional: ¼ tsp baking soda (for slight rise), ¼ cup chopped walnuts or dark chocolate chips (paleo-approved)
- Optional: Add 2 capsules of Kickstart My Heart into the batter
Instructions:
- Preheat oven to 325°F (160°C). Line an 8×8 baking dish with parchment paper or grease lightly with coconut oil.
- In a mixing bowl, whisk together eggs, honey, melted coconut oil, and vanilla until smooth.
- Stir in almond flour, cocoa powder, sea salt, and (optional) baking soda. Mix until well combined. Fold in optional add-ins if using.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Cool completely before slicing into squares.
Storage Tip: Keep brownies in an airtight container at room temperature for 2–3 days, or refrigerate for up to a week (not that they will last that long).
