Ingredients
Meatloaf:
- 1 lb ground bison (Wild Idea) or grass-fed ground beef (Wild Pastures)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 1 celery stalk, finely chopped
- 1 zucchini, grated and squeezed to remove excess moisture
- 2 eggs, pasture-raised
- 1/4 cup almond flour (or coconut flour for nut-free)
- 1/4 cup fresh parsley, chopped
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp thyme
- 1 tbsp coconut aminos (optional for flavor)
Topping:
- 1/4 cup sugar-free ketchup or organic tomato paste
- 1 tsp apple cider vinegar
- 1 tsp raw honey (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
- Prepare Ingredients: In a large bowl, combine the ground bison or beef, onion, garlic, carrot, celery, zucchini, eggs, almond flour, parsley, sea salt, pepper, oregano, paprika, thyme, and coconut aminos (if using).
- Mix: Using your hands, mix all the ingredients until evenly combined. Be careful not to overmix, as it can make the meatloaf dense.
- Shape the Meatloaf: Transfer the mixture to the prepared loaf pan and press it down gently to shape.
- Prepare Topping: In a small bowl, whisk together the ketchup or tomato paste, apple cider vinegar, and honey. Spread the mixture evenly over the top of the meatloaf.
- Bake: Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest: Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing. This helps it set and makes slicing easier.
- Serve: Slice and serve with your favorite Paleo-friendly sides, such as roasted sweet potatoes, steamed broccoli, or a fresh green salad.
