Soaking and Dehydrating Nuts for Optimal Nutrients


You have most likely heard that nuts have numerous health benefits. But have you been told they need to be sprouted in order to extract the nutrients and make them more digestible?

Why Sprout Nuts?

  • The soaking process makes them easier to digest and releases their enzyme inhibitors. 
  • Sprouting allows your body to absorb the nutrients.
  • The process breaks down the phytic acid in the nut which normally binds with minerals and prevents absorption.
  • It boosts their nutritional value.
  • It decreases anti-nutrients. Anti-nutrients naturally occur and inhibit our ability to digest vitamins and minerals

Best Way to Sprout Nuts:

  • 2 cups water
  • 1 cup nuts (I used pecans in this recipe.)
  • 2 tsp salt

Optional: honey, cinnamon, cardamom, other spices of your choice – even try some spicy ones! See: Top Ten Spices for Heart Health

Combine nuts, water and salt in a bowl. Soak for 8 hours or overnight. Strain and place nuts on a baking sheet lined with parchment. Toss with 1 tbsp raw honey and cinnamon to taste (or any other spices). Place in the oven on lowest heat or if you have a dehydrator use that on proper setting for nuts. Dehydrate until crisp – the time varies depending on the type of nut. Enjoy on salads or simply as a healthy snack.

Optional: make nut butter. Simply blend in the food processor until smooth (about 2 minutes). This is so much healthier than the nut packets with raw nuts and packaged in plastic!
